Guilt-free Cheese Ravioli

Whoever said that pasta and cheese were dieting no-no’s never learned how to cook with the weight loss for life plan in mind. If you’re looking for a way to keep dinner under 300 - 400 calories, you will find this low fat dinner just what you need to keep your weight loss successful.

Cheese Ravioli Reduced Fat Style
(Serves: Four

3/4 cup fat-free ricotta cheese
1/3 cup of grated Parmesan cheese
1 egg
1/3 cup freshly chopped basil
1 pressed clove of garlic
Pinch of ground nutmeg
A packet of 24 gyoza wrapper
Light Tomato Sauce

Mix up ricotta cheese, Parmesan cheese, freshly chopped basil, garlic 1 egg and the nutmeg in a medium bowl. Add salt and pepper. In the center of each gyoza wrapper, spoon a single rounded teaspoon of filling. To keep the gyoza wrapper together, lightly wet with water. Next fold each wrapper in half. To ensure that the filling remains inside, seal the edges by pinching it.

For preparation 2-hours in advance, move the ravioli to the refrigerator. In a large pot, pour 3 quarters of water and bring to a rolling boil. Delicately, drop the ravioli into the pot. Let the ravioli cook for 3 minutes or until it is tender. Gingerly stir so that the ravioli does not stick to each other.

Then drain and remove ravioli, pour the light tomato sauce, sprinkle with a little more parmesan cheese and garnish with the basil.
